Sticks can be obtained--among other ways--by destroying leaves, cutting down branches and trees, as well as placing Planks down and right clicking their topside with an Axe.

Knife Cutting[]
By holding any Sapling (vanilla or modded) in your off-hand and either a Flint, Iron, Gold, or Diamond Knife in your off-hand (and right-clicking), you can obtain 2 Plant Fibers and 1 Stick. This uses up the knife's durability.
